Wedding Sopot or Italian wedding soup is an Italian soup made up of green vegetables and meat. It's popular in the United States, where it is a staple in many Italian restaurants.

Materials
The wedding soup consists of green vegetables (usually endive and escarole or cabbage, lettuce, kale, and/or spinach) and meat (usually meatballs and/or sausages several times chicken containing Italian parsley and parmesan cheese) in a clear chicken broth. The wedding soup sometimes contains pasta (usually cavatelli, fusilli, acini in pepe, pastina, orzo, etc.), lentils, or grated parmesan cheese.

Origin
The term "wedding soup" comes from the Italian phrase " minestra maritata âââ ⬠" ("married soup"), which is a reference to the flavors produced by a combination of green and meat "weddings". The recipe of minestra maritata is also prepared by Lazio and Campania families. Some forms of minestra maritata have long been popular in Toledo, Spain, before pasta became an affordable commodity for most Spaniards. The modern wedding soup is quite a bit lighter than the old Spanish form, which contains more meat than just modern Italian-American meatballs.
